Spicy Vegan Nacho Cheese

The other night my husband requested that I make Vegan Nacho Cheese so we could sneak it in to the movie theater! No arguments from me! I love a good, semi-dangerous date night!

We are not vegan at all, but I have been making the effort to stay away from dairy. This is by far the hardest thing ya gurl has ever had to cut from her diet. I LOVE cheese! So any kind of dairy-free cheese alternative I am all for! Also, because we aren’t vegan this cheese sauce has to be gooooood to compare with real nacho cheese sauce.

After my husband’s request, I was on the hunt for a delicious, spicy, cheesy Vegan Nacho Cheese recipe! Most recipes I found had the right texture but no dang flavor. So I played with the recipe and came up with an amazing spicy, flavorful cheese sauce!

I knew it was a winner when my husband said it was better than regular Nacho Cheese and then proceeded to take a picture to send to his sister! Yes!

Of note: I also put this sauce on our Black Bean and Corn Veggie burgers the next day! Extra YUM!

I made this Vegan Nacho Cheese earlier in the day and then reheated it in the microwave right before we left for the movie so it was nice and hot! It felt like an adventure sneaking in our healthy, veggie filled Vegan Nacho Cheese to the theater.

I kept envisioning getting caught by the movie theater authorities and saying to them, “Well, do you offer VEGAN Nacho Cheese?! I thought not! Now leave me, my husband, and my vegan nacho cheese to enjoy the show!” But we didn’t get caught at all… they could’ve cared less about my delicious concoction.

Spicy Vegan Nacho Cheese

a delicious, spicy, dairy-free nacho cheese sauce

Makes: 6 Cups

Spicy Vegan Nacho Cheese

Ingredients:
  • 3 large Russet Potatoes
  • 3 Medium Carrots
  • ½ Onion
  • 3 cloves garlic
  • 2½ cups nutritional yeast
  • ¼ cup Lemon Juice
  • ¼ cup Apple Cider Vinegar
  • ½Tbs Mustard powder
  • 1 Tbs Garlic powder
  • 1Tbs Onion Powder
  • 2 tsp Cayenne Pepper
  • ¼cup of chopped pickled jalapenos
  • Salt to taste

Instructions:
  1. Peel and roughly chop the potatoes, carrots, and onion.
  2. Add the potatoes, carrots, onion, and garlic to a pot of boiling water.
  3. Once the potatoes and carrots are tender, blend the potatoes, carrots, onion, and garlic until smooth.
  4. Add to the blender, all other ingredients saving some jalapenos for garnish.

Note: Try adding Cauliflower instead of potatoes!
